You may think that the south of the Iberian Peninsula is not a land of Grenache, but with our Ingénito, 100% Axarquía Grenache, we have achieved a fresh and Mediterranean Grenache that is surprising, lively and unique.

Our Ingénito is a wine from vineyards in the village of Almáchar, a faithful example of the rugged terroirs of the Axarquia, in the province of Malaga, with slopes of over 70%, which forces us to practice a very hard form of heroic viticulture by which we perform a manual harvest, extracting the grapes from the different plots on our shoulders and with the help of our indispensable mules.

To obtain its particular character, Ingénito grapes are harvested at the beginning of August, in order to show freshness with a high potential and great aromatic load, as well as to achieve the perfect balance between sugars, acidity and pH. After the harvest we proceed to a manual selection of the clusters, in order to eliminate any overripe clusters that could obscure the maximum freshness so sought after in the final expression of the wine.

The maceration is carried out in a gentle, manual and delicate way, keeping the clusters in stainless steel tanks of 1000 liters in contact with the skin and 30% of stems, in order to give the wine a certain character and liveliness. For this fermentation we use the action of indigenous yeasts from the vineyard itself, following the principles of minimum intervention, this process is done in stainless steel tanks where the malolactic fermentation also takes place, at the end of which the wine will be refined in French oak barrels of 225 liters used to soften the effect of wood on the wine, for about 4 months in the case of this first vintage 2021.

After this time, we proceed to bottling.

The result is a wine of 13º, fine, delicate, mineral, with aromas reminiscent of cherry and strawberry, with notes of violet, resinous herbs and Mediterranean pines that accompany the delicate refinement of barrel aging. It presents a magnificent mouthfeel, fresh and balanced, a harmonious and very fresh set, which can be enjoyed at any time of the year.

All these characteristics make our Ingénito an ideal wine to accompany tuna and hearty fish, paellas and rabbit and poultry rice dishes, pasta, white meats, Iberian meats and mild grilled meats, as well as being perfect for pairing with cold meats and cheeses.

A ‘newborn wine’ that begins to give us the first joys, as having won a silver medal in the ‘IX Edition of the MonoVarietal Wine Competition’, in the category ‘Red Wines aged up to 12 months’, of Verema.
